Baking calms my nerves and is my favorite way to decompress. I grew up between Seattle and New Orleans and am now living in Chicago. All of these cities have had a huge impact on the way I approach baking, and food in general. These days I have a lot of friends who are vegan or gluten free (or both), and since I tend to push my baked goods onto my buddies I’ve been experimenting with recipes that cater to these crowds. I have to admit though, it’s tough to let go of the Holy Trinity of southern baking– Fat, Flour, Sugar.
